Ingredients needed
500g sliced chicken breast
1 tin chopped tomato
1 onion
Sugar Snaps Peas
1 courgette
Tomato Purée
Sugar free fajita mix

The process
Thinly slice the chicken & veg
Add the chicken to the pan and fry until cooked through.
Add the fajita mix (I use a tablespoon) and 3 tbsp tomato purée.
Cover the chicken in the mix and add the vegetables and tinned tomatoes.
Serve with rice or in a wrap.

ADDITIONAL INFO
You can swap the chicken with any type of protein.
The exciting part of this recipe is that you can add any veggies that you want.
